I love Sundays because it's really the only day of the week when I get to cook. Last Sunday, my imōto Erika came over and we made some delicious Korean fried rice and a modified version of Disaronno Strawberry shortcake. I got to practice my very rusty Japanese with her, and we giggled our way through all the recipes. Super. Happy. Sunshine. Funtime.

Ingredients:
2 bowls of cooked rice (about 3 cups)
1-2 tablespoons vegetable oil
2 garlic cloves, minced
¼ cup onion, chopped
5 ounces beef (about 3/4 cup), cut into small pieces: replace with chicken, pork, or ham
3 cups colorful vegetables,cut into small pieces (¼ inch cubes): carrot, zucchini, red bell pepper, yellow bell pepper, white mushrooms
1 or 2 green chili pepper (optional), chopped
2 green onions, chopped
1 egg, cooked sunny side up
2 teaspoons sesame oil
2 tablespoons oyster sauce
¼ teaspoon ground black pepper
We bought fresh ground meat from Chinatown on the day of.
Shhh...Erika and I Cheated a little bit and added Japanese Shrimp Fried Rice Mix to give our dish something special (not on the ingredient list).
I have an awesome rice cooker I got for a bargain from Costco but, there are tons of amazing ones from Korea and Japan!

Directions:
1. Heat a heavy-bottomed frying pan over high heat. Add the vegetable oil, garlic, and onion. Stir-fry them for about a minute until they’re light brown.
2. Add the beef and stir-fry for 2 to 3 minutes, until the beef is no longer pink.
3. Add the vegetables and stir-fry about 3 minutes.
4. Add the rice. Keep stirring and mixing for 3 to 5 minutes.
5. Add oyster sauce. Keep stirring and mixing for 2 minutes.
Remove from the heat.
7. Add sesame oil, ground black pepper, chopped green onion. Mix well.
8. Transfer it to a serving plate and place the sunny side up egg on top. Serve right away unless you’re preparing this dish for a party, in which case you can make it a few hours in advance.
While I made the rice, Erika carefully made the Salad.
Not gonna lie, the dressing was all Erika and it was AMAZING! All we used were mixed greens, roasted almonds, dried cranberries, and used honey + Korean rice Vinegar + lemon-pepper for the dressing. She got all the proportions right.

Time to make dessert...Ok so we cheated a lot and used box cake. But why reinvent the wheel?

Angel Food Cake mix is my favorite. Light, fluffy and just sweet enough. The batter fills the room with a delighful scent of amaretto.
Modified Disaronno Strawberry Shortcake Recipe

Ingredients:
Angel Food Mix (1 box), Fresh Strawberries (as much as you want), Disaronno (1 tablespoon), and Natural Strawberry Food Spread (Marmalade about 5 oz)

Directions:
1. Follow directions and make your Angel Cake
2. Cut up your fresh strawberries
3. Add 1 tablespoon of Disaronno, 5 oz of Strawberry fruit spread, 2 tablespoon of water and fresh strawberries into a small pot and let it boil at low temp
4. Boil Sauce for 10 mins on low heat so it thickens
5. When your Angel Cake is finished, let cool and serve with your just-made sauce
6. Smile and enjoy☻
I also served a dish of candy on the side. You can usually find this at any local Japanese grocer.
